MANGO TOMATO RED PEPPER SALAD with PAPAYA CILANTRO SALSA

A delicious and satisfying salad recipe that uses a tropical salsa instead of a dressing
Ingredients
  • <b>Salad Ingredients:</b>
  • ½ head of romaine or other combo of favourite greens (spinach, dandelion, red leaf)
  • 1-2 ripe mangos, peeled & sliced
  • 1 cup grape or cherry tomatoes, halved
  • ¾ sweet red pepper, sliced
  • ½ cup of cucumber, sliced quarter moons
  • 1 whole avocado
  • <b>Salsa Ingredients:</b>
  • 2 cups of ripe papaya, chopped
  • handful of cilantro, finely chopped
  • ¼ sweet red pepper, finely chopped
  • 1 roma tomato, finely chopped

Notes
You can also make this salad without the salsa. It is yummy on its own or with a dressing :)
